Almond ‘Breaded” Drumsticks (Gluten free)Ingredients needed:8 chicken drumsticks (or chicken breast, thighs etc)2 Tbsp. coconut oil or olive oil1 egg, beaten with a splash of water added3/4 c almond mealSeasoning of your choice
Mix almond meal with yr seasoning of choice (cajun, italian, bbq, etc) in a large bowl. I used some ground black pepper, Cajun seasoning and Celtic sea salt. But you can use whatever strikes your fancy. Season to taste.
Beat egg and a splash of water in a separate bowl.Dip the drumsticks in the beaten egg.Roll the drumsticks in the almond meal mixture. Place the breaded drumsticks in a baking pan (preferably glass) that has been coated with olive oil or coconut oil (I used coconut)
Bake at 350 degrees for 45 minutes.
*Note should have used more seasoning. Sorry I don’t have an exact measurement I would just taste the mixture of almond meal and spices to see if it’s to your liking.
Felt like it turned out pretty good considering it was my first time. I served it with steamed brown rice and a salad. :)
